So not sure if this is going to work. Gonna give it a try as see what happens.
I’ve put yellow and green peppers roughly chopped in the pan, added olive oil then sprinkled over a handful of uncooked quinoa. I then seasoned with salt and pepper and added 4 organic free range chicken thighs from Inglewood farms.
Then in a piece of genius thinking much more worthy for the Nobel prize for food than Monsanto I added whole heirloom tomatoes, sprinkled with paprika and a handful of fresh mint. I popped in a lemon cut in half, drizzled with extra virgin olive oil and a sprinkle of Maldon salt. Lid on and in the oven on low for an hour.
Need I remind you that my oven has a mind of its own, sitting somewhere outside of this reality in a parallel universe where ovens not only possess conscious intelligence, but also like to fuck with you a little bit. Just for fun. It is either on low or on high and I have no idea what those temperatures are. Even then the temperature fluctuates depending on its mood.
We’ll see how we go. Just put it in so I will report back in about an hour 🙂 x
