Welcome to the all new timmyfoody lunch page. I’ve been trying to eat as healthily as I can at lunch time recently. Primarily Sandwiches and Wraps. I thought I would put the best ones up here. Some really tasty combinations even if I do say so myself. You can navigate to the recipes from below. Just click the picture you like the look of or there’s a slightly more descriptive list below. I’ll try to put a couple of new ideas up each week so keep coming back to see what’s new!
You will see me referring to something called wrapglue™. This is something of my own invention. It is simply one of the ingredients of the wrap that you can use to stick the wrap together once it’s been rolled.
Normally my mashed avocado mixture works a treat but as do relishes, mustards and mayos. You normally pop a small amount on the edge of the wrap just before you roll it. Don’t make my constant mistake and get half way through rolling it and forget the wrapglue™. You will then have to hold the half rolled wrap with one hand while you pop some wrapglue™ on the wrap with your other hand. It can be tricky. Especially if you do what I do and overfill the wrap every time.
I’ll try to keep the lunch recipes as simple as possible. All should be doable in 10-15 mins or less. You will need a sandwich press in your kitchen. Well worth the purchase if you don’t have one.
7. Mexican Wrap
General Ingredients I recommend you always have to hand are:
- Maldon Salt
- Mustard of Choice
- Pickels – I’m loving the sweet and sour pickles with mustard seeds
- A wide selection of relishes. Current favourites are;
Onion Relish and Spicy Tomato Relish from Beerenberg
Pickle Relish from Saskia Beer
- A Selection Of Cheese. Current favourites are;
Tilba Club Vintage – Black Wax
Chilli and Lime Cheddar
Everything else you can just buy each day so you can see what looks tasty.
