Roast Chicken roll….need I say more?

ok so I’m loving my new cast iron Chasseur pan. It’s amazing. Get yourself one if you can. They do cost a bit but you can use it for so many different things and it will last a lifetime if you look after it.

So to my chicken roll. I had a sudden urge to have a chicken sandwich for dinner so I went and got some really nice organic free range chicken legs. I wanted to try roasting them in the my pan as the pot roast chicken I had the other day was so good. So I chucked it all in the pan. Popped it in the oven for an hour and a half and the legs came out perfect! I had some stuff to do round the house so it didn’t bother me that it takes this long. It’s a great thing to cook on a sunday afternoon and do a few chores round the house with the nice chicken smells wafting round the house.

For this you will need;

As many chicken legs as you like really. I cooked 9 as they fit in the pan nicely, plus I have some for the next for days for lunch or some sort of tasty dinner. If you have a 26-28cm pan I’d use at least 6 legs.
Garlic – 2 cloves
1 large onion
Salt
Pepper
Dried or fresh thyme 
Extra virgin olive oil
Fresh bread roll
Mixed salad leaves
Avocado 
Fresh tomato
Your choice of sauce.

1. So get the oven on about 160°C. In the pan slice the onion into about 1cm thick slices. Smash the 2 cloves of garlic and add them too. Add a drizzle of olive oil.

Now add the chicken legs on top, season with salt, pepper and olive oil. You can add a sprinkle of chicken stock powder if you like. Add a sprinkle of the dried herbs, pop the lid on and pop in the oven.

After an hour take out the oven and baste with the juices from the bottom of the pan. Pop back in the oven and give it another 30 mins. Now turn off the oven and leave for about
20-30 more mins just sitting in the oven as it cools.

2. Now get pan from the oven remove the chicken legs and strip the chicken from the bones. Pour a ladle or two of the juices from the pan over the stripped chicken.

3. Now get your roll. Spread over the avocado then add the chicken, the tomato, the salad then a bit of mayo if you like. I completely forgot the avocado and the tomatoes looked rubbish so I didn’t bother. If you want to make it a little bit less healthy then add some nice creamy strong cheddar. For this one I used some nice pepper mayo I made with some BBQ sauce but do the avocado, cheese and tomato thing if you can. It’s well nice!

  1. Mmmmmm this is making me hungry! I especially like the bit where you spread the advocado over the roll. Sounds delicious!
